Four culinary tastemakers grab seats at the table in London.

Aquavit introduced contemporary Nordic cuisine to New York. Its new U.K. outpost, Aquavit London, takes a more casual approach, serving everything from sheep’s-milk yogurt with cloudberry compote at breakfast to Johan & Nyström coffee and fresh cardamom buns throughout the day. Lunch and dinner progress from a seafood-centric smorgasbord to main dishes such as duck breasts with parsnips and langoustines with smoked eel. Spanish chef David Muñoz lands in Mayfair with StreetXO, a casual counterpart to his triple- Michelin-starred DiverXO. Like the original StreetXO in Madrid’s Corte Inglés flagship store, London’s subterranean sibling puts on a show with chefs who serve tables right from their pans. Asian and South American flavors accent Pekinese dumplings with a crunchy pig’s ear drizzled Jackson Pollock-style with strawberry hoisin, and kimchi croquettes topped with cured tuna. 15 Old Burlington Street.

Lauded French chef Anne-Sophie Pic makes her British debut with La Dame de Pic London. Curved leather banquettes and beveled-mirror columns set the scene for dishes such as pasta with smoked Pélardon cheese and wild mushrooms, and white mille-feuille with Tahitian vanilla ice cream. 10 Trinity Square.

In April, Martha Ortiz of Mexico City’s acclaimed Dulce Patria at Las Alcobas hotel hops the pond to open her first restaurant outside Mexico at the InterContinental London Park Lane. Ella Canta promises contemporary moles and chiles en nogada, as well as Dulce Patria favorites such as vampire ceviche (so named for its color and spice). 1 Hamilton Place, Park Lane.
