The Duck Inn specializes in the namesake rotisserie fowl, but for those interested in winging it, if you will, at the cozy tavern, chef Kevin Hickey offers a four-course menu with beer pairings that might include sea urchin risotto with a pilsner made using Champagne yeast, or grilled wagyu steak with an Oktoberfest. 2701 S. At Victor Tangos, beverage director Matt Ragan balances rich dishes and sharp beers to “keep your palate from fatiguing.” A sour wheat beer from Destihl Brewery cuts the succulence of confit pork shoulder, while Southern Tier Brewing Company’s stout stands in for coffee with the sticky toffee cake. 3001 N. Beer for breakfast? Why not, asks chef Naomi Pomeroy, whose Beast restaurant offers beer and wine pairings with an ever-changing brunch menu, ranging from blueberry clafoutis to a hash of peach-braised pork, Padrón peppers, and potatoes topped with a duck egg. 5425 NE 30th Avenue

Featuring 28 draft lines, a cask tap, and about 150 beers by the bottle, Monk’s Kettle was born to showcase the best matches between brews and dishes such as pan-seared Arctic char, duck confit with Brussels sprouts, and Penn Cove mussels. 3141 16th Street

Washington, D.C.

Beverage director Greg Engert’s pairings at Birch & Barley showcase a range of flavors starting with Right Proper Brewing’s oak-fermented wheat beer served with an asparagus and egg appetizer. The cheese course comes with a three-beer tasting, and the funnel cake is paired with stout. 1337 14th Street NW

Take one for the team: Budding brewmasters put the “micro” in microbrewery when crafting their choice of a light, dark, amber, or other style of beer at Melbourne, Australia’s new Athletic Club Brewery. The taproom serves house ales, and offers small group classes (limited to 12 people) that each produce a 50-liter kettle of beer. Classes from $195 per group. 47 Maier Street E.
